The cuisine of Nice is light and Mediterranean and is mainly characterized by the use of olive oil, regional vegetables and fish.

Lots of fish and fresh vegetables

Of course, the cuisine of Nice has much more to offer than the world famous "Salat Nicoise". The cuisine of the region is light and mediterranean, a lot of fresh vegetables and fish are used. Visitors to Nice should definitely try the Nice olives. They are small and firm and extremely tasty. The olives are used to make "tapenade", a paste that is excellent on toasted slices of bread. Of course, excellent olive oils are also produced in the region. There are a few shops where guests can also eat snacks or try one of the wines from Provence.

The "Oliviera", which is located in the old town of Nice, is recommendable. In addition to a rich assortment of specialties from the region, typical local dishes can be tasted here. Particularly tasty are the "fleurs de courgettes farcies", zucchini flowers stuffed with a minced meat mixture. The wines from the hinterland of Nice are to be recommended, for example the "Bellet". In this small wine-growing area are the oldest vineyards in France and excellent wines with the AOC seal are produced.

If you want to try something very typical but quite unknown, you should dare a bite into the "Tarte aux blettes". A sweet cake filled with apples, chard, raisins and pine nuts. A very unusual creation, but one that definitely has its charms. Another famous dish of the region is of course the fish soup from nearby Marseille, the "Bouillabaisse", for fish lovers a must when visiting the Cote d'Azur. Fish plays a major role on the Nice menu anyway, alongside regional products such as olive oil and vegetables. Very tasty is also the "Pissaladière", a kind of onion tart with anchovies.
